Serves 4 Cooking and prep time: 50 mins
Ingredients
1 egg
2 tsp sesame oil
1 tbp vegetable oil (alternatively use sunflower or olive oil)
200g/7oz cooked long grain rice (or rice of choice)
100g/4oz frozen peas (rinsed and thawed under warm water)
100g/40z other mixed veg (optional)
4 spring onions – finely chopped – if you do not have spring onions use 1/4 of a small onion finely chopped.
1-2 tsp light soya sauce
1-2 tsp dark soya sauce
Ground white pepper
Pinch of salt to taste
Method
- Heat a little vegetable oil in a large pan or wok and heat.
- Add the chopped onion first and cook until soft, but not brown. Add the other vegetables and stir fry for a couple of minutes till nearly cooked through.
- Beat the egg in a small bowl.
- Move the vegetables to the side of the pan and pour in the egg.
- Cook and scramble the egg in the remaining oil, until cooked.
- Then mix in the vegetables from the side.
- Add the cooked rice, salt, pepper, sesame oil. Mix and cook altogether for about a minute until rice is heated through. (Add 1/2 tsp of water if rice is very dry).
- Serve straightaway.
Top Tip: Also add sweet corn, cooked prawns or cooked shredded chicken, when adding the veg to vary the variety.
