Southern fried potato chips

Serves 4   cooking and prep time : 30mins

Ingredients

200 g  Maris Piper potatoes

125g plain flour

1 tsp garlic salt

1 tsp onion salt

1 tsp salt

1tsp paprika

120ml water

Sunflower (or vegetable) oil for frying

Method

  1. Wash, peel and slice potatoes into 1/2 cm discs and place in cold water to stop browning.
  2. Heat oil in a large frying pan to a medium heat.
  3. While oil is heating, mix flour, garlic salt, onion salt and paprika into a large bowl, add a little water at a time, as you stir, until a thick paste is formed. Add a little more until you have a runny batter.
  4. Dip the potato into the batter, then into the hot oil. Ensure they do not stick together. Once golden brown remove and drain on paper towels.

Top tips:

Make southern fries like this too, instead of slices cut the potato into 1cm sticks.
