Spicy potato wedges

Serves 6  Cooking and prep time: 40mins

Ingredients

1kg Desiree potatoes

25g melted butter

1 tsp curry powder or other seasoning (e.g. jerk seasoning)

Salt and pepper

 

Method

  1. Preheat the oven to 180C /375F /gas 6
  2. Wash and cut potatoes into 8 wedges.
  3. Boil in salted water for 5 minutes.
  4. In a bowl, mix the melted butter, spices and salt and pepper.
  5. Pour out the water from the potatoes then add them to the mixture, covering them.
  6. Place the wedges on a greased baking tray and cook on the middle shelf for 20 minutes, turning a couple of times, until soft in the middle and crispy brown on the outside.
  7. Serve hot with dips or ketchup

Top Tips:

To make the wedges cut the potato in half lengthways down the middle, then into 4 wedges out of each half.
