Serves 4 Cooking time and prep time: 30 minutes
Ingredients
2 potatoes peeled and grated
1 small white onion
1 egg whisked
2 tbp plain flour
Salt and pepper to taste
3tbp cooking oil
Method
- Mix together the grated potatoes, onions, salt and pepper.
- Add a whisked egg.
- Add the flour slowly until the mixture comes together.
- Add a little more salt and pepper.
- Pour a little cooking oil into the bottom of a frying pan and heat on a low heat. Move the oil around until base is covered.
- Add the potato mixture to the pan, flatten and shape.
- Cook and flip over a few times until cooked and golden brown on both sides.
- Serve with a mixture salad.
Top Tip:
Do not put the heat up too high and flip fritters regularly to ensure even cooking throughout.
Add some grated cheese to the mixture and parsley to liven it up too.
