Serves 4 Cooking and prep time: 10 minutes
Ingredients
1/4 cucumber
8 Cherry tomatoes
Handfulof rocket leaves
1/2 cup canned sweet corn
Grated carrot
Method
- Slice the cucumber as thinly as possible
- Cut the cherry tomatoes in half
- Make a bed of rocket leaves in the bowl and add everything else to it.
- Mix them altogether in a bowl and serve as a side.
Top Tips:
Alternatively use thinly sliced white cabbage, thinly sliced red onion or sliced peppers, even strips of iceberg lettuce to vary the taste and colour.
