3 Cheese Salad

Serves 8    Cooking and prep time: 15 minutes

Ingredients

1 packet of rocket leaves or kale

A handful of halved cherry tomatoes

A handful of diced cucumber

1/2 cup of shredded mozzarella cheese

1/2 cup of diced feta cheese

1/2 cup of crumbled gorgonzola cheese

1/4 cup of chopped pecan nuts (optional)

Balsamic Vinaigrette Dressing

1/3 cup of white balsamic vinegar

1/3 cup of olive oil

1 tbp minced red onion

1 tbp minced fresh basil

1 minced clove garlic

1 tsp Dijon mustard

1 tsp sugar

1/4 tsp pepper

 

Method

Prepare the salad, mix everything together.

Make the dressing by mixing altogether then pour some over the salad as needed.

 

Top Tip:

Why not add some shredded chicken, tuna or other meat to this salad to power it up or even cooked chick peas for a vegetarian alternative.

Also use different cheeses if you prefer.
