Coleslaw

Serve 4   Cooking and prep time: 20 minutes

Ingredients

1/4 White cabbage

1/4 small onion

2 large grated carrots

1tbp vinegar

4 tbp mayonnaise

Salt and ground black pepper to taste

 

Method

  1. Chop up the white cabbage so it resembles thin sticks or grate it if you prefer smaller pieces, grate the carrots.
  2. Finely chop up the onion.
  3. Combine all the above in a large bowl.
  4. Add the salt and pepper, mayonnaise and vinegar.
  5. Mix together then let it sit in the refrigerator for an hour before you serve.

 

Top Tips:

Make coleslaw fresh so that it is nice and crunchy, and not limp and soggy after a day.
