Lamb/Quorn Penne Pasta Bake

Serves 6   Cooking and prep time: 40 minutes

Ingredients

500g Penne pasta

1/2 tsp Olive oil

1 Onion finely chopped

660g Lamb mince / Quorn mince

Jar of pasta sauce

Grated cheese

Salt

 

Method

  1. Preheat the oven to 200C / 180C fan / 375F
  2. Cook the penne according to packet instructions with a 1/4 tsp of salt.
  3. Once cooked drain the water and cool with cold water. Drain again and set aside.
  4. Pour a tsp of olive oil into a frying pan and heat over a medium heat. Cook the chopped onions until soft, stirring to prevent burning. Add the mince or Quorn mince for a vegetarian version and 1/4 tsp of salt.
  5. Cook by stirring with a wooden spoon over a medium heat, until browned.
  6. Add the pasta sauce and stir until mince is covered.
  7. Bring to the boil, then reduce the heat and simmer for a couple of minutes.
  8. Remove the pan from the heat.
  9. Add the pasta to the meat and stir till coated.
  10. Pour mince and pasta into a shallow oven dish.
  11. Sprinkle grated cheese over the top.
  12. Place the dish in the oven for 15 minutes until the cheese has turned golden brown.
  13. Serve with a salad
