Kids Vegetarian Chow Mein

Chow Mein can be served hot as a main or cold as a salad. This simple Chow Mein, is great for kids as the vegetable piecesare bigger and easier to remove if necessary and also crisp for those who do not like soggy vegetables.

Serves 3-4   cooking time and prep time 30 minutes

Ingredients

1/2 packet medium dried egg noodles or 3 nests

Handful of shredded tofu (or optional chicken or prawns)

 

Vegetables:

1 large carrot

2 spring onions

50g mangetout / peas

30g beansprouts (optional)

Shredded cabbage leaves

50g mushrooms (optional)

1 red bell pepper sliced (optional)

150 g broccoli (optional)

2 tbp Olive oil / sesame oil or cooking oil

1 cloves of crushed garlic

Ground white pepper and salt to taste

Sauce:

1 tbp  dark soy sauce

1 tbp  light soy sauce

1 tbp honey

1 tsp tomato ketchup

1/4  tsp lemon juice

 

Method

  1. Put the noodle nests in a pan of boiling water and let them soak for 5 minutes. Then drain and run cold water through them.
  2. Peel and grate the carrots and chop any other vegetables that you have decided to use into slices.
  3. Mix soy sauce, honey, ketchup and lemon juice into a bowl with a couple of tbps of water. Add a sprinkle of salt and pepper to taste. Add extra soy, honey or ketchup to reach preferred taste.
  4. Heat oil in a large frying pan or wok.
  5. Add garlic and stir fry for a few seconds. Add grated carrots, spring onions, other veg and tofu. Stir fry for 2 minutes on a high heat then add the sauce mixture and additional water if necessary.
  6. Taste.
  7. Add extra honey, lemon or soy sauce, salt, pepper if needed.
  8. Add the cooked noodles to the stir fry along with beansprouts if being used.
  9. Stir fry again on a high heat for a couple of minutes, then serve hot.
