Serves 2-4 Cooking and prep time: 15 minutes
Ingredients
200g Spiral pasta
Small tin of pink salmon
Handful of cherry tomatoes
10cm cucumber sliced and diced
1tsp lemon or lime juice
1/5 small red onion
2tbp canola oil
1/4 tsp of dill
1/4 garlic clove minced
Salt and pepper
Torn lettuce leaves
Method
- Boil pasta with a tsp of salt until cooked.
- Drain and run under cold water.
- Drain the tinned pink salmon and break it up.
- Halve the cherry tomatoes.
- Chop up the cucumber into small chunks.
- Chop up the red onion into thin slices.
- Combine with the oil, lemon or lime juice, salt and pepper.
- Mix well and serve on a bed of lettuce.
