Mexican Taco Bowl

Serves 4  Cooking and prep time: 30 minutes

Ingredients

1 cup brown/white rice

2 tbp olive oil

500g minced meat (lamb, beef, chicken)

2 packets of taco seasoning

1 can of kidney beans

1 small can of sweet corn

2 diced tomatoes

5 leaves of iceberg lettuce

Taco shells

Yoghurt sauce

 

Method

  1. Cook the cup of rice according to the packet instructions and set aside.
  2. Heat the olive oil in a large pan add the minced meatand cook for 4-5 minutes until browned add the taco seasoning stiring it through the mince until cooked. Drain the fat.
  3. Heat the taco shells in oven according to packet instructions. then break into crisp size pieces.
  4. Layer all the cooked ingredients starting with the ripped lettuce leaves, adding  salad vegetables, meat, rice and finishing with yoghurt sauce and the broken taco pieces.

Top Tip

Make them in individual containers, like salad jars for the perfect summer picnic meal or packed lunch.
