Chicken Salad

Serves 4   Cooking and prep time: 20 minutes

Ingredients

1 cup of cooked shredded chicken (leftovers would be perfect)

2 small tomatoes chopped

Curly lettuce

2 boiled eggs halved

2 tbp plain yoghurt, mayonnaise or Balsamic vinaigrette

Red onion thinly sliced

Balsamic Vinaigrette Dressing

1/3 cup of white balsamic vinegar

1/3 cup of olive oil

1 tbp minced red onion

1 tbp minced fresh basil

1 minced clove garlic

1 tsp Dijon mustard

1 tsp sugar

1/4 tsp pepper

 

Method

Prepare the salad, mix everything together.

Make the dressing by mixing altogether then pour some over the salad as required.

 

Top Tip:

Use plain yoghurt instead of balsamic vinaigrette
