Easy Egg Fried Rice

Serves 4  Cooking and prep time: 50 mins

Ingredients

1 egg

2 tsp sesame oil

1 tbp vegetable oil (alternatively use sunflower or olive oil)

200g/7oz cooked long grain rice (or rice of choice)

100g/4oz frozen peas (rinsed and thawed under warm water)

100g/40z other mixed veg (optional)

4 spring onions – finely chopped – if you do not have spring onions use 1/4 of a small onion finely chopped.

1-2 tsp light soya sauce

1-2 tsp dark soya sauce

Ground white pepper

Pinch of salt to taste

Method

  1. Heat a little vegetable oil in a large pan or wok and heat.
  2. Add the chopped onion first and cook until soft, but not brown. Add the other vegetables and stir fry for a couple of minutes till nearly cooked through.
  3. Beat the egg in a small bowl.
  4. Move the vegetables to the side of the pan and pour in the egg.
  5. Cook and scramble the egg in the remaining oil, until cooked.
  6. Then mix in the vegetables from the side.
  7. Add the cooked rice, salt, pepper, sesame oil. Mix and cook altogether for about a minute until rice is heated through. (Add 1/2 tsp of water if rice is very dry).
  8.  Serve straightaway.

 

Top Tip: Also add sweet corn, cooked prawns or cooked shredded chicken, when adding the veg to vary the variety.
