Easy peasy potato salad

Serves 6  Cooking and prep time: 30 minutes

Ingredients:

800g new potaotoes or Maris Piper or left over boiled potatoes

3 finely chopped spring onions

3 tbp mayonnaise

3 tbp extra-virgin olive oil

1 tbp vinegar

1 tsp salt

Ground pepper to taste

A handful of chopped parsley (optional)

Method

  1. If using Maris piper potatoes, peel, dice and rinse potatoes before placing them in a pan of cold water with a teaspoon of salt. Wash cut new potatoes in half then place in the cold salted water.
  2. Bring to the boil, then simmer for 20 minutes.
  3. While they are boiling, chop the spring onions, (and parsley if you being used).
  4. Check to see if cooked by passing a knife through the thickest part of one of the pieces. If soft remove from the heat and pour out the water. And pout in cold water to cool the potatoes down. Change the cold water a couple of times or add crushed ice.
  5. Once cold, pour the water out again and place the potato pieces onto some paper towels to remove the excess moisture. If using new potatoes, cut the potatoes into smaller chunks as necessary.
  6. Then place potatoes into a bowl and add onions, mayonnaise, salt and pepper to taste, vinegar, parsley and olive oil. Combine thoroughly and serve cold.

 

Top Tip:

Use a slice of white onion finely chopped as an alternative, if there are no spring onions.

Have with or without potato skins.
