Serves 3-4 Cooking and prep time: 1 hour
Ingredients
2 large Maris Piper potatoes
3 tsp cornstarch
1/4 cup of flour
3 tbp breadcrumbs
1 tbp salt
1 tsp pepper
Cooking oil
Equipment
Circular cutter, straw, tablespoon, greaseproof paper, rolling pin
Method
- Peel the potatoes and cut into small chunks.
- Boil them in salted water for 20 minutes or until potatoes are soft.
- When soft pour out the water are mash the potatoes with the cornstarch, flour, breadcrumbs, salt and pepper.
- Add an egg and mix together.
- If the mixture is too moist add more breadcrumbs or flour to make it more dry.
- Roll out some greaseproof paper and sprinkle some flour on it.
- Place the potato mixture on the paper and sprinkle more flour on top of it.
- Place another sheet of paper on top.
- Use a rolling pin and roll this out to 1 cm thick.
- peel off the top sheet of paper
- Use a circular pastry cutter to cut out circles.
- Use a straw to cut out the eyes and the end of a spoon to make the shape of the mouth.
- Shallow fry the smiley faces in a couple of inches of cooking oil for about 15 minutes until golden brown. Turning over to cook both sides evenly.
- Place the cooked pieces on paper towels to drain the oil.
- Then serve once cooled.
Top Tip:
Why not make other shapes with pastry cutters.
