Homemade potato smiley faces

Serves 3-4 Cooking and prep time: 1 hour

Ingredients

2 large Maris Piper potatoes

3 tsp cornstarch

1/4 cup of flour

3 tbp breadcrumbs

1 tbp salt

1 tsp pepper

Cooking oil

Equipment

Circular cutter, straw, tablespoon, greaseproof paper, rolling pin

Method

  1. Peel the potatoes and cut into small chunks.
  2. Boil them in salted water for 20 minutes or until potatoes are soft.
  3. When soft pour out the water are mash the potatoes with the cornstarch, flour, breadcrumbs, salt and pepper.
  4. Add an egg and mix together.
  5. If the mixture is too moist add more breadcrumbs or flour to make it more dry.
  6. Roll out some greaseproof paper and sprinkle some flour on it.
  7. Place the potato mixture on the paper and sprinkle more flour on top of it.
  8. Place another sheet of paper on top.
  9. Use a rolling pin and roll this out to 1 cm thick.
  10. peel off the top sheet of paper
  11. Use a circular pastry cutter to cut out circles.
  12. Use a straw to cut out the eyes and the end of a spoon to make the shape of the mouth.
  13. Shallow fry the smiley faces in a couple of inches of cooking oil for about 15 minutes until golden brown. Turning over to cook both sides evenly.
  14. Place the cooked pieces on paper towels to drain the oil.
  15. Then serve once cooled.

Top Tip:

Why not make other shapes with pastry cutters.
