Quinoa Salads

Serves 6 cooking and prep time: 1/2 hour + 1 hour chilling time

Ingredients

2 cups of water

1 cup of rinsed quinoa

1/2 chopped in strips red bell pepper

1/2 chopped yellow bell pepper

1/2 small red onion sliced or diced

Juice of 1 lime

Freshly chopped coriander

1 1/2 tsp curry powder

Salt and pepper to taste.

 

Method

  1. Boil the water in a pan, then pour in the dry quinoa and simmer on a low heat for 15-20 minutes until all the water has absorbed. Transfer to a mixing bowl and set it aside to cool down.
  2. Then cover with cling film and place in the fridge to chill for 1/2 hour.
  3. Take out quinoa and stir in all the other ingredients – peppers, onion, curry powder, coriander, lime and season with salt and pepper.
  4. Chill again in fridge for another 1/2 hour before serving.

Top Tip:

For a non-spicy version, leave out the curry powder and change the salad vegetables to sweet corn or other salad vegetables you’d prefer, to cater for fussy eaters.
