Salmon Pasta Salad

Serves 2-4  Cooking and prep time: 15 minutes

Ingredients

200g Spiral pasta

Small tin of pink salmon

Handful of cherry tomatoes

10cm cucumber sliced and diced

1tsp lemon or lime juice

1/5 small red onion

2tbp canola oil

1/4 tsp of dill

1/4 garlic clove minced

Salt and pepper

Torn lettuce leaves

Method

  1. Boil pasta with a tsp of salt until cooked.
  2. Drain and run under cold water.
  3. Drain the tinned pink salmon and break it up.
  4. Halve the cherry tomatoes.
  5. Chop up the cucumber into small chunks.
  6. Chop up the red onion into thin slices.
  7. Combine with the oil, lemon or lime juice, salt and pepper.
  8. Mix well and serve on a bed of lettuce.
