The Very Best Roast Potatoes

Ingredients

1kg Desiree potatoes

100ml Olive oil

2 tsp flour

Sea salt

Roasting tray large enough to cook one layer of potatoes

Method

Heat the oven to 200C/fan 180C/ gas 6.

Peel the potatoes and cut into 5cm chunks.

Place the pieces into a large pan of water and just cover the potatoes with water. Add salt and wait for the water to boil. Once the water has reached boiling point, lower the temperature and continue to boil vigorously for 2 minutes.

In the meantime pour the olive oil into the roasting trayand place in the oven to heat up.

Drain the water out of the potatoes, then shake the potatoes in the pan a little to fluff up the sides.

Shake in the flour to evenly coat each piece. then place each piece carefully into the hot roasting tray.

Cover all the pieces in a layer of the hot oil,by spooning the oil on or rolling the potatoes aroundin the oil, which will be sizzling hot – so take care.

Spread them out so that thet make a single layer.

Roast them in the oven for 15 minutes, take them out and turn them over, and turn them for another 15 minutes or until they are golden brown and crisp.

Shake on some salt, they serve hot.

 

Top Tip: To change the taste cook in duck or goose fat.
